Gluten free buckwheat bread

This bread tastes super delicious and nutty 🙂 I have been looking for the perfect vegan and gluten-free bread for a long time. Now I finally found what I was looking for. The bread is very suitable for breakfast. You can use hummus, almond butter, homemade jam or avocado as topping. It is simply, a better and a healthier variety than traditional bread. Ingredients:

  • 12 tbsp water
  • 2 tbsp chia seeds
  • 500 g buckwheat flour
  • 50 g puffed amaranth
  • 1 pck baking powder
  • 450 ml lukewarm water
  • 2 teaspoons salt
  • 3 teaspoons sweetener of your choice (In my case agavendic juice
  • 120 g chopped walnuts
  • 15 g sesame seeds

Preparation:

  1. Mix the chia seeds with 12 tablespoons of water and set aside for about 30 minutes.
  2. In the meantime we weigh all other ingredients.
  3. Add the chia egg to the remaining ingredients.
  4. Mix the bread dough with a food processor to a smooth mass.
  5. Brush a square cake tin with about 1 teaspoon of coconut oil.
  6. Pour the dough into the cake tin and cut 1-2 cm deep along the length.
  7. Now spread 15 g unpeeled sesame seeds on the bread.
  8. Bake the bread at 200°C circulating air for 40 minutes in a preheated oven.
  9. After baking, allow to cool briefly, then turn out of the mould.
